(Un)Stuffed Peppers

We took a familiar stuffed pepper recipe from one of our favorite bloggers Skinnytaste and unstuffed it! Adapted for our family by leaving in all the goodness and taking out the fuss, we cooked everything together in one skillet. Super easy! We hope you love it as much as we do!


Ingredients

  • 1 pound Shores ground meat (preferred 80/20 ground beef)

  • 1 garlic clove minced

  • 1/4 onion minced

  • 1 TBSP fresh cilantro or parsley

  • 1 TSP cumin powder

  • 1 TSP garlic powder

  • 1 TSP sea salt (we prefer Celtic brand)

  • 3 large bell peppers any color, sliced

  • 1 8oz can of tomato sauce (add more if appears to dry)

  • 2 cups cooked brown rice ( I prefer frozen, it thaws as you simmer)

  • 1/2 cup shredded mozzarella cheese (or cheddar cheese)

  • Olive oil spray

Cooking instructions for Stove top

  1. In medium size skillet spray olive oil spray, use with medium heat

  2. Add onion, garlic and cilantro saute about 2 minutes, add in ground meat, cumin, salt and garlic powder

  3. Cook 4-5 minutes or until meat is completely cooked through

  4. Add in can canned tomato sauce, sliced up peppers and rice

  5. Let simmer for about 5-6 minutes ( or until peppers are tender) on medium heat, stirring occasionally

  6. Serve while hot and add cheese of choice
